This platter is the ultimate dairy free platter of goodness. Our probiotic cashew cheeses are the best addition to any platter, paired with some nourishing fruit and veggies you literally can’t go wrong. Check out this recipe for gluten and grain free seedy crackers, no nasties involved!

Yields: 6-10 Servings

Ingredients:

  • 10 Medjool dates
  • 3 cup Raw chopped veggies such as cucumber, squash, carrots and radish
  • 1/2 cup Sundried tomatoes
  • 1 cup Fresh berries, sliced
  • 1 cup Olives
  • 1 Jar Peace Love and Vegetables Dill Cashew Cheese
  • 1 Jar Peace Love and Vegetables Dill Cashew Cheese

SEED CRACKERS:

  • 2 tbsp Chia seeds
  • 1 cup Flax seeds, whole
  • 3 tbsp Sesame seeds
  • 1 cup Pumpkin seeds
  • 1/2 tsp Sea salt

Directions:

  1. To make the seed crackers place all ingredients in a bowl with 250ml water. Stir and leave to soak for 30 minutes.
  2. Preheat the oven to 180C and line a large baking tray with baking paper. Spread the soaked seed mixture in a thin layer over the baking paper. Using a knife, make rough indents in the mixture in a grid pattern to later break into crackers.
  3. Place in the oven for 30 minutes then remove, flip the entire mixture over (it may be easier to break into halves or quarters before doing this). Place back in the oven for 30 minutes, being careful not to burn it.
  4. To assemble the platter, place the cashew cheese jars in the centre and lay everything else around it including the seedy crackers! Enjoy.

NOTES

The platter options are endless! You can add hummus, roasted chickpeas, any kind of veggies, roasted nuts and even kraut! Yum!
