Cilantro Chimichurri

When it’s impossible to find basil it’s time to move on from pesto. Chimichurri is an awesome fresh sauce with a bit of funky chunk to it and a little zing on the tongue!

Ingredients: 

  • 1 bunch Cilantro
  • 1 bunch Italian Parsley
  • Juice from 1-2 limes
  • ½ cup olive oil
  • ¼ cup roughly chopped onion
  • 2 peeled garlic cloves
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • ¾ tsp kosher salt
  • ½ jalapeño pepper

Method:

  1. In a food processor, place jalapeno, garlic, onion, and pulse several times until chopped.
  2. Add cilantro, stems and all, and Italian parsley, olive oil, lime juice, cumin, coriander, and salt. Pulse until combined, leave a little bit chunky for the best texture!
  3. Serve fresh! Great over roasted meat, on veggie tacos, even just in your sandwich!
